INTRODUCTION
Carrot (Daucus carotta L.) , a biannual herbaceous plant of the Apiaceae family (formerly
Umbelliferae), native to Central Asia. It is widely cultivated today for its fleshy
, edible taproot, generally orange in color. This root vegetable is mainly rich in fiber,
carotene and present on all continents. In Benin, it is more cultivated all along the coastal strip on
sandy soils.
