INTRODUCTION
Synsepalum dulcificum (Schumach. & Thonn. Daniel) is a species of the Sapotaceae family native to
West Africa. It is a slow growing forest plant but very prized for its fruits which have the capacity to transform the sensations of acidity. These fruits have long been used by local communities to consume sour or acidic foods. In Benin, Synsepalum dulcificum is more common in the Guinean zone with a very dispersed distribution. There is no specific population for the species. This constitutes a risk of its disappearance if no action within the framework of the restoration of the species is carried out within the coming decades. This document outlines simple and sustainable techniques for producing sisrè.
